Sometimes I just need a peanut butter cookie. I also like to make and freeze these because they are high in protein and I can grab for an after work-out snack.
- 1/2 cup peanut butter, it can also work with sunflower butter
- 3/4 tsp baking soda
- 3 tbsp flour- I like to use gluten free flour, oat flour, or a gluten free mix
- 1/3 cup sugar, unrefined if desired, I like less sweet, so will use ¼ cup and they come out fine. If you prefer no refined sugar, use the same amount of maple syrup, half the applesauce and add another TBSP of flour
- 2 tbsp applesauce
- 1/2 tsp pure vanilla extract
- 1/8 tsp salt
Mix together your wet ingredients. Soften your peanut butter in a double boiler if you need to or if you use a microwave you can do it that way. Then mix the dry ingredients together. Blend briefly and bake for 8 minutes or so at 350 degrees. Watch them, they can burn. SO GOOD!
